I love these preserves because they're both sour and sweet.
For the best color, choose those true-red sour cherries.
1. Choose fresh, ripe sour cherries.
2. Rinse them with cool water, and remove stems and leaves.
3. Pit the cherries and put them in a large bowl.
If you have a lot of cherries, this is a good activity to do with a partner or two.If you're alone, settle in.
This will take awhile. Listen to the radio, watch television, or the meditative nature of a quiet, repetitive task. :)
