I'll agree with the folks who say French for Cinderella. Her stepmother is Lady Tremaine, and a family named DuBois (Doo-bwahhhhhh) is mentioned at the ball.

Jasmine, Arabic, ditto.
Snow White and Ariel were both listed for their best known authors: Germany's Grimms and Denmark's Andersen, respectively. Though, technically, I suppose Ariel is Atlantican...just as Giselle is Andalasian.
Pocahontas and Tiana, American--though in different ways.
Esmerelda, unknown... Gypsies in France in 1482 could be Muslim, Jewish, bi-racial, tri-racial, anything the French aristocracy didn't like--hence, the living in exile. Maybe some Spanish in her? Perhaps North African?
Megara, Greek.
Mulan, Chinese.
Jane, English.
Nala, African... ;-)
And Rapunzel? We could guess as we did for Snow White and argue Grimms Brothers = German. But, rumor has it she's stylized in French Roccoco, so we'll see. Guess they're giving up on the polite nod to globalization and going back to indefinable western-European white girls.
