why are the humans with made vampire soulmates stayin human?

Most humans wouldn't want to drink blood and hunt to live unless they have no other option.

If u have a made vampire soulmate (an your human)it would be better if they can get turned into vamps 2 then they can live happly ever after!
i wonder if that happens in the following night world stories?
