All of the titles are symbolical. Well I think twilight is just talking about the fact that its the safest time of day for them. It is however symbolic as well. It talks about twilight as the symbolising the end of the day, so they talk about it being sad because they live forever and for them there is no true end. Twilight is the inbetween time. It is between night and day. You could say that the Cullens are stuck in the twilight of life. Inbetween the end(night) and life(day)

As for New Moon, new moon is the first stage in the mmon cycle. It symbolizes a new beginning. When Edward left Bella in New Moon it was her having to move on and start over.

Now for Eclipse. Eclipse is symbolizing one thing over riding another. In space science its when a moon covers the sun to say it without getting in detail. Jacob and Edwards love for her are at the breaking point and one will over power the other. Obviously Edward prevails and they get married and Edward you could say covers Jacob. Although this could be described as a partial eclipse because Bella still holds onto feelings for Jacob. It takes him imprinting on her daughter for her to finally just except him as a friend and let go of any other feelings she had involving Jacob.

The last book, Breaking Dawn, is symbolizing Bella's awakening as a vampire and new beginnings. Dawn is the beginning of a new day and breaking dawn symbolizes all the new beginnings for Bella with her new family and daughter, the wolves and their new alliance with the Cullen's, Bella's new relationship with Jacob and their friendship, and Jacob's imprinting on Nessie.

This question really is a matter of opinion and how each individule person interperates it. This is simply my take on it. Hope it helped!

It's also a metaphor mentioned it in the book. In New Moon, Bella had already described Jacob as her "sun", bringing light and joy when she was depressed over missing Edward. However, Edward and her love for him eclipses Jacob and her newfound love for Jacob.
