When flying from Sweden to Australia, my husband prefers to connect in Singapore because their airport is sooo beautiful. And it is, gorgeous I mean.
BUT... I prefer to await my connection at Hong Kong's relatively new airport. Why? Because they have a very cool hair salon.
See, by the time we land to await our next leg of the loooooong flight, I'm ready to be pampered. This salon is so great that I have run in there like a lunatic before with 30 minutes until my next flight screaming for a wash, cut, and blow dry.
They did it.
They did it very well. They posted one person at the door to watch for signs of boarding on my flight while the other guy worked his magic. I was impressed, and now fly through Hong Kong whenever possible because of that hair salon.
So like, tell me about your airport loyalties. I'm always looking for great layovers ;)

Shopping:
* Schipol/Amsterdam and Kastrup/Copenhagen for the many shopping choices
* Hong Kong's new airport for the amazing choice in cosmetics
* Johannesburg and Bangkok for the great souvenirs -- you don't often find decent souvenirs in airports
Architecture
* Charles de Gaulle (terminal 1) for the futuristic architecture -- even though it is in a bad state these days
* Bangkok's new airport for the impressive exterior
* Gardermoen/Oslo because of the way art is integrated into the terminal building
Misc.
* When crossing the Atlantic, I prefer to stop at Keflavik/Reykyavik (Iceland). This way I can stop and stretch my feet half way across the ocean.
Sunflower, I agree that the Bangkok Airport is great for shopping. I just flew from there last week and also noticed a great bakery/breakfast cafe...that unfortunately I didn't record the name of, given that my flight left at 7am. But I usually try to notice interesting restaurants that aren't chains in the airports.
Incheon Airport (S. Korea) has a fun traditional Korean art section where visitors can paint fans and/or bowls for free. It easily fills up an hour of waiting.
