Saber true identity is Arturia Pendragon (King Arthur)... note: when I refer to he I mean King Arthur and when I say she I mean to Saber (Arturia)

King Arthur was gathering all his knights to look for the Holy Grail from which Jesus drank. The legend said he could gain with it eternal life... So he searched for it his whole life. But in the end he fought with Mordred. U can see in anime gap from that fight when Saber was fighting herself... In the end you could see as she was in the end when she was laying wounded by the tree. Deeply wonded she started to regret for even drawing sword from the stone. Then when she was laying there she was asked by the the Holy Grail would she participate the war for the Holy Grail. She search for that her whole life and she accepted that offer. That is why she is the only servant that couldn't go to spirit form, because she wasn't full servant, she was still partly bound to her life. She excepted that offer in order not to die and try to gain new life. She fought with Kiritusgu in 4th Holy Grail War, but Kiritsugu ordered her to destroy it without explanation *they barely talked during Holy Grail War*. While Kiritusugu walked that living hell he made by ordering Saber to destroy Holy Grail he saw one boy that was barely alive. He put Avalon that had within him to save that little boy. That boy was Emiya Shiro *rest u know from anime*. That is why Shiro with hard work could become magus, he didn't have magic circuit for it, but he risked his life every time trying to use it. He became one of magus that could participate in Holy Grail War, as you know he didn't knew. So he had catalyst Avalon, inside of him (he wasn't aware of that), that could be used to summon Servant Saber Arturia Pendragon. So he summoned her and you know how the story went. The magic connection between Shiro and Saber was not so good, but they were mentaly more connected. As u could see they were having dreams about their pasts (Shiro Saber's and Saber Shiro's). Saber talked with Shiro what happened in the past. The more she talked about it the more she was feeling regret for becoming a king. So in the end when they destroyed the Holy Grail and she got her stolen sheet Avalon. Because she destroyed the Holy Grail and she finally said to her loved one that she love him, not sure about this but I am sure that the Holy Grail granted her wish and returned her to the place she was lying. And there it was here loyal knight Bedivere in girl form. The Legend says that the same that happened in anime in the end the same King Arthur asked Bedivere to do him that favour, to throw that sword into the lily lake where it came for.
*note: King Arthur's sword was given from the lily in the lake, but the only shallow that I don't know who put it into the sword, my guess would be Merlin.
If you played visual novel and you have all patches for it you will get in the end where Saber don't die. She is still alive inside of Avalon. The legend of King Arthur says too that Arthur didn't die, but he lives within Avalon.
