Uncharted is by far my favorite game and with Uncharted 2 coming out soon I'm pretty sure it will be my new favorite.

Ps1 - Resident Evil series
Ps2 - tomb raider
Psp - Tenchu: time of the assassins
Ps3 - Resident evil 5 (wooo!)

Final Fantasy series on both PS1 and PS2, especially FFVII, FFVIII and FFXII.
