No. And she dosen't actually choose Eric over Bill till the 4th book, under extreme circumstances. She may have dumped Bill in the third, but she didn't exactly run into Eric's arms either (unless you count Sookie asking Eric to drive her home, instead of Bill).

I highly doubt we will EVER see such a quick Sookie rebound on the show, since its not in her character to be that aloof. Instead she always needs some 'cooling down time' since she is far to hotheaded when something goes bad.
