Well, I know what my answer is and what most purists will say. For me it's Koa all the way - I even named my 2nd child Koa ;-)
Mahogany is nice but I'm not so big on Spruce tops (for ukuleles anyway).
On the subject of Koa I also have a Martin 00 Koa guitar which is very nice.
