Ok, this is a great chicken pot pie. I make it once a week for my fiance. He absolutley loves it!!

INGREDIENTS
1 pound skinless, boneless chicken breast halves - cubed
1 cup sliced carrots
1 cup frozen green peas
1/2 cup sliced celery
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
1 3/4 cups chicken broth
2/3 cup milk

2 (9 inch) unbaked pie crusts
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C.)
In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.
Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

Almond Shortbread

300g (2 cups) plain flour
40g (1/4 cup) icing sugar
50g (1/2 cup) ground almonds
225g chilled unsalted butter, cubed
1 egg yolk
1/2 teaspoon vanilla essence
Icing sugar, to decorate
Method
Preheat oven to 180°C
Place plain flour, icing sugar, ground almonds and butter in the bowl of a food processor and process to combine. Add egg yolk and vanilla essence, and process until all ingredients just form a ball. Cover with plastic wrap and refrigerate for 30 minutes.
Divide dough into 4 equal portions. Roll out one portion between two pieces of baking paper to about 8mm thick. Cut into desired shapes (such as starfish or stars) and place on an oven tray. Repeat with remaining dough portions. Bake in preheated oven for 10-15 minutes or until beginning to colour and cooked through. You may have to cook them in 2 separate batches. Cool on a wire rack and sprinkle with icing sugar.

My Favorite Chicken Salad. You can also make it into a Chicken Salad Sandwich =D

Ingredients

1 can of Chicken
A half a cup of Apple Juice
1 stick of Celery
Celery Salt
Mayonnaise

Open the can of chicken and empty the juice in the sink. Put the chicken in a boil and mash it up into thin pieces.
Put 2 spoons of mayonnaise into the bowl with chicken and mix it up.
Cut the stick of Celery into tiny pieces. Then add it to the bowl.
Add the half cup of apple juice and celery salt - NOT TOO MUCH CELERY SALT - and mix it up.
Put a plastic sheet around and over the bowl and put it in the fridge.
Wait 2 hours. Then take platic off and enjoy! =D

You can also experiment with it to make it meet your tastes! =D
