Here's some stuff I remembered seeing:
Olaf may claim he’s not eating Anna’s cake, but he’s not fooling anyone. But who can really blame the little guy for his indulgence? Certainly not the birthday girl he believes is worth melting for.
As a fun tribute to the lovable snowman, here’s a sweet treat complete with an Olaf truffle and mini sunflower cake, inspired by the

1½ cups good quality white chocolate chips
Chocolate licorice (cut into small strips), pretzels (crushed up in a bag and shaped with kitchen knife), or a cinnamon stick (trimmed with kitchen scissors)
Orange circus peanut or similar soft orange candy
To make the truffle mixture, bring the cream to a simmer in a small heavy saucepan. Add the butter, stirring until it melts. Immediately add the white chocolate chips, continuing to stir with a wooden spoon or whisk until they melt and the mixture is very smooth.
Pour the truffle mixture into a heatproof bowl and let it cool for a few minutes. Then, cover the bowl tightly and chill the mixture for at least 2 hours (it will keep in an airtight container, chilled, for 2 weeks).
Meanwhile, prepare the mini cake by slicing the top off the cupcake to level it. Center the cupcake on a small saucer, and generously spread blue frosting on the sides and top. Decorate the iced cupcake with sugar pearls, yellow and brown candy flowers. Set the decorated cake aside while you create the truffle snowman.
Use a spoon to scoop out enough of the chilled truffle mixture to roll into a 1¾-inch wide ball for Olaf’s lower body. If it gets a little sticky, just roll the ball in powdered sugar and continue. To make the torso, shape a little more of the mixture into an oval about 1¼ inches wide and ½ inch tall. For feet, roll two ½ inch balls, and press down on the tops to flatten them a bit.
Assemble the pieces you’ve made so far by moistening the tops of the feet with a tiny drop or two of water and then gently pressing the body ball down on top of them. Likewise, stack the torso atop the body. Next, insert a wooden toothpick down through the center of the torso and body, leaving the upper inch exposed (this will make it easy to attach the head later). Set the assembled snowman body in a small bowl and keep it chilled in refrigerator for now.
Scoop out more of the truffle mixture to shape into a head that looks like Olaf’s. It should be roughly 2¼ inches tall, 1 inch wide at the top, and 1¾ inches across the cheeks. The section below the cheeks should be slightly elongated and tapered at the chin.
Use the tip of a kitchen knife or toothpick to etch a wide grin across Olaf’s cheeks. Then, shape a 3/8-inch square “tooth” from a bit more of the truffle mixture, and gently press the top of it into center of the grin groove.
For the eyes, use the flat end of a wooden kitchen skewer to tamp down two 3/8-inch circles (about ¾ inch above the top of the tooth). Or, if you have a 3/8-inch round pastry bag tip, simply press shallow eye circles into the face. Gently push a mini chocolate chip pupil (the pointy shape toward Olaf) into the center of each eye circle. You can even add a glint to each eye by using the tip of a toothpick to gently press a teeny speck of the truffle mixture onto the upper edge of the pupil. For eyebrows, roll slivers cut from a Tootsie Roll Midgee into 3/8-inch-long crescents, and gently press them in place ¼ inch or so above the eyes.
Use a toothpick to poke a hole (about 1 inch deep) up through the neck for when you will attach the head to the body. Make another ¼-inch hole in the top of the head for inserting the “sticks.” Set the Olaf head on a plate and chill it in the refrigerator while you finish up.
Use kitchen scissors to snip thin strips of licorice (varying lengths from ¾ inch to 1¼ inches) for 3 or 4 “hair” sticks. For the arms, cut 1-inch lengths and fringe the ends to create “fingers.” Alternatively, you can melt a tablespoon or so of mini chocolate chips in the microwave, and then use a small clean paintbrush to lightly coat pieces of a splintered pretzel with chocolate. If using the latter option, set the coated pieces on a sheet of wax paper to let the chocolate set up before using. Or, another option is to use a cinnamon stick, trimmed with kitchen scissors.
For the nose, roll a small piece of a circus peanut into an inch-long “carrot.” Remove the chilled snowman body and head from the refrigerator. Smear a little bit of blue frosting on Olaf’s upper lip and chin. To attach the nose, use the flat end of the kitchen skewer to tap down a small circle right below the eyes. Gently press the base of the carrot into the depression, using a tiny drop of water to glue it in place, if needed.
Fit the head down onto the toothpick end protruding from the torso. Then, insert the ends of the hair sticks into the hole at the top of the head. Stick the base of the arms to the sides of the torso, so that the fingers point toward the chin. Lastly, use the skewer to tamp shallow holes for the “buttons” and gently press a brown M&M’s Mini in each of them.
For the finishing touch, use the tip of a toothpick to scratch a “bite-size hole” in the side of the decorated cupcake, and you’re ready to assemble your mini Olaf cake-eating scene. Plus, you’ll have extra truffle mixture to roll and dust with powdered sugar. Enjoy!
