INGREDIENTS

FOR THE CAKE

Cooking spray
1 box vanilla cake mix, plus ingredients called for on box
1 1/2 c. strawberry jam
1 c. peanut butter
FOR THE FROSTING
1 (8-oz.) block cream cheese, softened
1 1/4 c. peanut butter
2 1/2 c. powdered sugar
2 tbsp. heavy cream
1 tsp. pure vanilla extract
Toasted chopped peanuts, for garnish

DIRECTIONS

Preheat oven to 350°. Grease a 9”-x-13” baking pan with cooking spray.
Prepare baking mix according to package directions. Pour into prepared pan and bake until a toothpick inserted in middle comes out clean, 30 minutes. Let cool completely.
Using the bottom of a wooden spoon, poke holes all over cake in rows.
Place jam and peanut butter into 2 separate bowls and microwave until loose, about 10 seconds. Pour jam over every other row of holes. Pour peanut butter over remaining rows.
Make frosting: In a large bowl using a hand mixer, beat cream cheese and peanut butter together until smooth. Add powdered sugar and beat until no lumps remain, then add vanilla and heavy cream.
Frost cake with peanut butter frosting and top with chopped peanuts.

FOR THE CHEESECAKE LAYER
1 (8-oz.) block cream cheese, softened

1 tsp. pure vanilla extract
1 c. heavy cream
FOR THE STRAWBERRY TOPPING
1/2 c. sugar
1/2 c. water
1 tbsp. cornstarch
1 1/2 tbsp. Strawberry Jell-O mix
1 pt. fresh strawberries, sliced

1/4 tsp. kosher salt
3/4 c. low-fat small-curd cottage cheese
4 tbsp. chilled unsalted butter, cut into 1/2 inch cubes
FILLING
1 lb. Granny Smith apples
1/4 c. granulated sugar
2 tbsp. unsalted butter
1/4 tsp. ground cinnamon
4 tbsp. water
1 tbsp. cornstarch

Juice of 1 lemon
2 c. water
1/2 c. packed brown sugar
1/4 c. cornstarch
1 tsp. vanilla
1 tsp. cinnamon
Pinch kosher salt
2 (14-oz. packages) refrigerated pie crusts
2 Eggs, beaten
2 tbsp. Sanding sugar
Caramel, for serving

DIRECTIONS
Preheat oven to 350 and line a large baking sheet with parchment paper.
