Harry Potter Question

Guys,I am seriously confused.Hope you could help me out.

I DH,when the Trio talks about their parents' safety,Hermione tells that she did a memory charm on her parents' so that they forget they have a daughter.But when they are in Tottenham Court Road,in that cafe,when Harry asks Hermione to remove the memories of the Death Eaters,she says she has never done it and only knows the theory.Then how did she removed/modified her parents memory?

The spell for modifying memories is different than the spell for removing memories. In the book, she modified her parents memories, not removed them.

I'm pretty sure she also makes them think they want to move to Australia so that could be a whole nother aspect of it.
