You can put ponies to work on there, for example, if you make Twilight Sparkle work there, and the flour is finished, you click on it to collect, and then you collect some experience points and bits. The more shops you have, the more experience and bits you will get.
How to send presents: You tap on your menu, and it says friends. You have about 8 or so. Tap them and press the present. That means you're giving them a gift, and they will give you one back shortly.
How to collect gems: To collect gems, you can buy the theatre. If you watch three of the videos, you get about 6 gems, 2 gems each video.
How to play with your ponies: Your ponies usually need to stars so they can level up, so you have to play the games. When they're ready, a ball, a star, or apples come out on their house. If you reach a star, you play a fun game where you clear the skies. You collect bits, and then they become yours.
How to go to Canterlot: You need to be level 15 to do this. You click on the train and travel to Canterlot. You can buy some shops there too. You can also buy ponies like Vinyl Scratch and Octavia.
